L'Oppidum
This dry Vouvray is vinified on the same process as our cuvée “L’Indigène”. The only difference resides in that we use brand new oak barrels, to mark the wine even more. Also, the juices used for this cuvée come from a small single vineyard called Oppidum, gifted with a wonderful soil and ideal exposition. Harvest is done manually. This parcel used to host 80+ years old vines, before we uprooted it after the 2016’s harvest. The new vine seems just as promising !

Fermentation and ageing in new french oak, for 12 months.
Natural yeast.
Residual sugar : less than 2g/L
Tasting notes
- Type : Dry
- Grape variety : Chenin blanc
- Color : Beautiful yellow, more or less bright depending on the vintage, great intensity and brightness.
- Nose : Depending on the vintage, complex ensemble of minral and broom notes, intense spice notes such as curry and yellow pepper, and candied citrus. Overall supported by sweeter aromas such as honey and beeswax. The new oak imparts vanilla aromas, that will tend to fade and integrate into the wine with its evolution.
- Palate : Flint, roasted honey apple, soft spices. We find here again ripe white fruit notes, and oaky flavours where the bitterness of chicory and white truffle meet. Long finish.
Food pairing
This wine will pair beautifuly with sophisticated fishes and seafood, roasted poultry or exotic inspired cuisine.

Lobster, creamy scallops. Roasted fattened chicken, truffle juice.

Best served between 8 et 12°C
Ageing potential : between 30 and 60 years depending on storage conditions.
