Harvest : both mechanical and manual.
Traditionnal method: base wine vinified in steel mainly, and oak barrels.
Ageing : 24 months on leed in our cellar.
Dosage (residual sugar) : 10g/L
Tasting notes
- Type : Sparkling
- Grape variety : Chenin blanc
- Color : Beautiful pale yellow with straw reflection. Intense and shiny. Thin persistant bubbles.
- Nose : Dominant fresh apple and brioche notes, held up by smoky notes. With its good intensity, the nose develops towards fresh cereal notes, coated by nice acacia scents.
- Palate: Fresh and lively, delicate but present bubble. Of nice structure, this sparkling wine is overall balanced by a gentle dosage. Tasting ends on fresh herbs aromas.
Food pairings
This sparkling will pair perfectly with cheese platters, sea food such as oysters, or fruit desserts (white, yellow or exotic fruit). Or enjoyed on its own for your celebrations !
